Mango With Sweet Sticky Coconut Rice

Ingredients

  1. 1 cup Thai glutinous rice, soaked in water and covered for 2 hours
  2. 1.5 cups coconut cream, preferably freshly extracted
  3. 3/4 cup granulated sugar
  4. 1/2 teaspoon salt
  5. 2 teaspoons rice flour
  6. 4 fully ripe Thai mangoes
  7. Sesame seeds for garnish

Directions

  1. Rinse the soaked rice until the water runs clear, then drain well and steam the rice - this could take anywhere between 20-30 minutes for the rice to be fully cooked. When the rice is fully translucent, immediately turn off the heat and keep the rice hot in the steamer.
  2. In a saucepan, combine 1 cup of the coconut cream, the sugar and 1/4 teaspoon of the salt over medium heat and bring to boil, stirring to dissolve the sugar. Add the hot rice to the coconut syrup, mix well and remove from heat. Cover and let the rice steep and cool down for 40 minutes, stirring once half way through.
  3. While the rice is steeping, put the remaining 1/2 cup coconut cream and the remaining 1/4 teaspoon salt in a small saucepan and whisk in the rice flour. Place the pan over medium heat and whisk continuously for about 2 minutes, until the mixture comes to a gentle boil and thickens. Remove the pan from heat and set aside to use as a topping.
  4. Working with one mango at a time, use a sharp paring knife or a vegetable peeler to peel off the skin. If possible, cut the mango using a seesawing motion to remove the flesh in a single slab. Flip mango over and remove the flesh from the opposite side in the same way - giving you 2 fillets. Repeat with remaining mangoes.
  5. To serve, arrange 2 mango fillets on each of the 4 serving plates. Divide the sticky rice evenly and spoon the coconut cream topping on top of the rice and sprinkle with sesame seeds. Serve immediately.

An exciting new partnership is here to take you more places than ever before!

Two Dubai-based airlines, Emirates and budget-carried flydubai, have joined forces to extend services and flight routes across the world. Emirates made the announcement via their Media Centre earlier today, sharing the details of their partnership.

The "Partnership includes an expansive codeshare agreement, schedule alignment and network optimisation; Passenger benefits to include access to over 200 unique destinations," and "seamless travel experience and frequent flyer programmes alignment." The two companies are not merging, and will continue to be managed independently.

HH Sheikh Ahmed bin Saeed Al Maktoum, Chairman and Chief Executive of Emirates Group and Chairman of flydubai, spoke of the partnership: "This is an exciting and significant development for Emirates, flydubai, and Dubai aviation," he said.

"Both airlines have grown independently and successfully over the years, and this new partnership will unlock the immense value that the complementary models of both companies can bring to consumers, each airline, and to Dubai."

One of the major goals of the two airlines joining forces is to create a more expansive network and a more seamless travel experience for people coming into and flying out of Dubai, and by 2022, Emirates and flydubai are expected to reach a combined 240 destinations, served by 380 air crafts.

Online shopping is clearly major in the GCC; recently Amazon bought Souq.com and Emaar Malls the majority of Namshi.com. However fashion isn't what gets people clicking online in the region, at least for millennials. According to a YouGov survey, most people are buying mobile phones and computer software or hardware (20 percent), while electronic equipment (19 percent), games (17 percent) and e-books (13 percent) follow closely behind.

People aren't keen on getting health products (7 percent), video games (7 percent), books (6 percent) or sporting goods (6 percent) on the internet. Music (4 percent), pet-related items (3 percent) and flowers (3 percent) are even less popular.

As it is with mechanics, so it goes with remodelers: collaborating with an honest, trustworthy professional is absolutely crucial. Trying to find a good remodeler can be daunting and anxiety-provoking, so one professional, Dan Bawden, took to Reddit recently to answer the burning questions of homeowners everywhere in an "Ask Me Anything" series.

Based in Houston, TX, Bawden has 35 years of experience and serves as chairman of the National Association of Home Builders' Remodelers Council. He's also lent his expertise to media outlets like HGTV, New York Times, and Forbes. To find out his best advice on everything from current kitchen trends to the unreality of "reality" home makeover shows, keep reading.

Treat a remodeler like any new hire: interview them and check references.

One wary Redditor asked about how to hire a trustworthy remodeler - especially after hearing so many horror stories about "crook contractors." Bawden suggests treating this as though you're hiring any other kind of employee - with an interview and references. He explains:

First, do good interviews on the phone to properly vet people before anybody comes out. Ask questions like, "Are you a member of the local builders association? Do you have any certifications in remodeling and construction, like CGR = Certified Graduate Remodeler or CAPS = Certified Aging in Place Specialist?" Ask for references before anyone comes out, then call two or three of them. Ask about what the experience was like, working with that contractor? Were there weeks that went by where no one came to work, and you didn't know why? Or did work progress at a good pace? Were the workmen tooth-less and scary or neat, professional and presentable? Did you feel you got a good value for what you paid? What was the communication like? Could you get someone on the phone if there was problem - even after hours? How neat did they keep your home? What measures did they take to keep the dust contained? Poor remodelers do these things poorly and drive the homeowner into deep stress mode.

A few simple updates can make your home much more attractive to buyers.

Bawden has some easy (and affordable) suggestions for anyone trying to make their home more appealing to prospective buyers. First off, identify any outdated features that can be spruced up. "If you have those old 'honey oak' orange-y looking cabinets, paint them as soon as possible. Look for cosmetics you can do quickly - if the light fixtures over the bath sinks are dated - put in new ones, for $50."

You certainly don't need to shell out a ton of cash to give the home an impressive refresh. "Biggest bang for the buck tasks are painting (inside and out) and adding lighting like LED recessed cans, replacing bad carpet and other worn flooring, and getting rid of Formica and cultured marble countertops, replacing them with stone or quartz tops."

Those home makeover TV shows get a LOT wrong.

It's probably no surprise that home makeover TV shows are more fiction than fact, but Bawden details what, exactly, they get wrong about the remodeling process. The biggest discrepancy is in time commitment, as shows like Fixer Upper make it seem like high-quality remodels can be done in a short period of time. "There is a lot of running for materials, preparing sketches, consultation with the trades etc. that you never see, but that takes time on any real job. In reality it takes a couple of days to build the cabinets, a week to get granite fabricated, a few days to do drywall and painting just because of the drying times. Tile takes 2-3 days, then you order shower or tub glass and that takes a week to 10 days to be made up and installed. Just those fabrication waiting times add about three weeks. Then there is stopping to wait for inspections, etc. The DIY channel jobs do not appear to be inspected at all in most cases."

This resource is best for finding realistic cost estimates in your region.

The other way in which home makeover shows mislead viewers is in the cost estimates. To find out what a project will realistically cost you based on regional data, Bawden advises searching online for CostvsValue.com and looking at projects in your area. "Very interesting, valuable yearly survey to look at."

The biggest kitchen trends are drawers (instead of cabinets) and glass backsplashes (instead of porcelain).

With kitchen remodels, people are leaning more toward "gut-and-redo's than face-lift jobs because they want lots of drawers and fewer cabinets. No one likes getting on the hands and knees to dig a pot out of the cabinet." For those who do keep their cabinets, Bawden has seen an uptick in "painted look" cabinets, rather than stained. As for counter materials and backsplashes: "More clients are choosing maintenance-free counter materials, like the quartz tops. There are more and more spectacular quartz choices. My favs are Caesarstone and Cambria. I do more glass and glass+stone + metal back-splashes than tile or porcelain. Stainless steel tiles on the splash are growing in popularity in our contemporary kitchens." And when it comes to lighting, the dominant trend is LED lighting "in the form of smaller recessed lights (4-5"), indirect lighting like toe kick lighting, over-cabinet lighting are popular, as are LED under-cabinet task lights."

Consider ripping out those big ol' bathtubs.

More homeowners are favoring showers to tubs these days, and Bawden observes that the most popular thing in bathroom remodels is "taking out that old tub and putting in a curb-less, walk-in shower."

These are the biggest red flags in a home inspection.

Home inspections can be overwhelming, so it helps to prioritize the most urgent issues that are flagged in them. According to Bawden, "Electrical issues are top priority. Old breaker boxes and crazy homeowner wiring from the past can burn your house down. Plumbing concerns are next. Signs of serious foundation problems are also a biggie!" Of course, it's best to address these types of problems ASAP.

Wandering the food stalls on a warm Summer day at Smorgasburg in Los Angeles, I couldn't help but notice a booth selling something called "dry salsa." Intrigued, I wandered over to check out their samplings and was a little apprehensive of the dark red chili mixture that I saw - it looked hot enough to burn any sane person's tongue.

I asked Giovanna Rebagliati, the owner and creator of Salacious Dry Salsa about the history of this condiment. "It was inspired by the traditional salsa de semillas," which roughly translates to a salsa of seeds, "from the Michoacán region of Mexico," Giovanna said. According to her, it's not very well known, even in Mexico. Typically, a dry salsa is a mixture of dried chilies, various seeds and nuts, other seasonings, and a touch of oil to hold it all together. Giovanna has put her own twist on it with flavors like lime, and her online store is coming soon.

I figured if it were that hot that it would come with a warning instead of a big scoop on a tortilla chip. Upon my first inspection, it didn't smell as spicy as it looked, and I was promised that what I had in my hand was "mild," so I took a bite. It was crispy, crunchy, not too spicy, and full of a flavorful mix of spices; this thing called dry salsa actually delivered on what it promised! I immediately started imagining the endless cooking possibilities for a sauceless salsa that packed the crunch of dry roasted tortilla chips in every bite. Dry salsa avocado toast, anyone?

Personally, I could easily see this becoming the next mainstream trend like Trader Joe's everything bagel seasoning. I know I'd eat it on everything!

In honor of World Emoji Day (which, in my opinion, should be declared a federal holiday and include a national festival), Apple is sharing a short preview of the new emoji coming to Apple products later this year. And better yet, two of the emoji represent a positive step forward for women's representation.

Those notable additions include a woman breastfeeding and a woman with a headscarf. The breastfeeding emoji was originally proposed by Rachel Lee, a nurse who felt that the emoji was needed alongside the baby-bottle emoji that already exists. The woman-with-headscarf emoji is an answer to 15-year-old Rayouf Alhumedhi's call for more inclusivity. The teen wanted an emoji that looked like her . . . and the rest of the Muslim women around the world who also wear a hijab or headscarf. The 56 new emoji, which were officially released by the Unicode Consortium on June 20, also feature a bearded person, zombie, T-rex, elf, and face vomiting.

Apple's preview of the new emoji coming to iOS 11 doesn't include all 56. But for now, the small released batch will do. Check them out ahead and start counting down the weeks till they're out.

All Kids Under 4 Riding a Careem Must Use a Child Seat, But Here's the Catch

They cut the prices of their rides catered to children recently when the United Arabic Emirates got tough on their child seat laws, and now Careem is following suit by introducing their own strict standards when it comes to little ones. Those under 4 years old must now be strapped into a special child seat. Careem Kids rides come equipped with one for youngsters weighing up to 30kgs, making it super convenient if you're traveling with one child. However, if you're going around with more than one child, you'll have to provide your own extra seats.

So if you were thinking about ditching the car for the day to free yourself up, those with a whole brood might be better off sticking to the family vehicle.

"We welcome any new actions that can keep our children safer on the roads. Careem proactively introduced Careem Kids, a dedicated fleet of cars with child seats in Dubai, some three years back," Bassel Al Nahlaoui, VP Business Development & Government Relations at Careem, says. "With the new UAE regulation regarding use of car seats coming into effect, customers should select the Careem Kids service when they are traveling with a young child. Our Careem Kids service offers one universal child seat for a child up to 30 kilos and we are in talks with suppliers to offer booster seats for older children for added safety.

"Our roll out of Kids in Abu Dhabi has also been fast tracked so that we can extend the service to families in the capital at the earliest. As a matter of protocol, we are informing all our drivers of the new law and asking them to decline any booking where a young child traveling is not catered for with a child seat."

Malala Yousafzai recently enjoyed her final day of school, a big achievement for the 20-year-old girl who we first got to know and love when she was the victim of an attempted murder by the Taliban in 2012.

Recently, she got to meet someone with a similar story, Najla, a Yazidi (a small religious community persecuted by ISIS) girl who was shot in the hand while fleeing her wedding to pursue an education, aged 14.

"I left my high heels because I couldn't run in them," she told Malala, who is currently on a Girl Power Trip around the globe. Gathering with a bunch of young ladies in Kurdistan, Iraq, she explained the she went against family wishes so she wasn't forced out of education and into marriage.

"I don't want to marry you because I have a dream to be a journalist and I am too young," she said to her husband-to-be.

ISIS have invaded her town and 5,500 people like her have been killed while 90,000 Yazidis have had to flee their homes.

You'll be happy to know Najla is currently in school and despite having to walk an hour to get there and live in the shell of a building, she is happy.

A recent study has coffee-lovers questioning everything they thought they knew about brewing a simple cup at home. The study, published in Scientific Reports and titled The Effect of Bean Origin and Temperature on Grinding Roasted Coffee, found that chilling coffee beans before grinding and brewing coffee results in a more flavorful cup.

If you're like me (a self-proclaimed coffee addict), you keep your coffee in an airtight container on the countertop near your coffee maker, which results in a totally fine and tasty pot of coffee. But I just might start keeping the container in the fridge to see if it makes a difference. This study, led by a team of scientists from the University of Bath in the UK, claims that "cooling of coffee beans significantly decreases the rate of mass loss through volatile sublimation/evaporation. Thus, coffee that is ground and brewed cold could potentially demonstrate increased aroma and or flavor in the eventual brewed cup." If you don't grind your own beans at home, chilling already-ground coffee should have the same effect.

The lengthy study goes into a ton of detail and science-heavy explanations (read in full if fancy charts and particle comparisons are your thing), but the bottom line is:

Refrigerating coffee beans = a better start to your morning.

Queen Elizabeth Adopts a New Corgi Named Whisper

Queen Elizabeth II, notable lover of Corgis, has supposedly adopted yet another furry friend to add to the royal brood. According to Town and Country, the queen has decided to keep the 9-year-old Corgi named Whisper after its owner, Sandringham gamekeeper Bill Fenwick, passed away earlier this year.

The current royal has had Corgis for her whole life. In fact, she's had more than 30 of them and even invented the Dorgi (Dachshund-and-Corgi mix) when she was young. She still has two Dorgis, Vulcan and Candy, currently and one Corgi, Willow. The queen had previously said she would not be breeding anymore Corgis, as she was getting on in years and didn't want to risk any of them injuring her or any of them being left without her in case she passed away. However, it seems she's fallen in love with Whisper and might be going against her previous statement.

The mermaid trend isn't showing any sign of dying down so instead of just giving your makeup routine under the sea vibes, why not start transforming your home too? The Dubai Home Show is bringing the world's largest clam shell to the emirate, an 18,000-year-old fossil and its pearl, this September.

Marine conservationist, Volker Bassen, has turned her other finding into cool bathroom sinks in the past, with one of her findings selling for $32,000 or $100 per kg.

This one from the Kenya-Tanzania border, weighs a whopping 373kg, so could it go for $373,000. Now, it is way larger than the average sink and would probably make a better bath, although it could be tricky to get out of.

"Throughout history clamshells have been found in quarries along the East African coast. When I first saw one of them 20 years ago, I was amazed by the sheer beauty and size. The shells have not seen sunlight for at least 180,000 years, at which time they became extinct. Now we are able to bring out their beauty by using skilled craftsmen to carefully clean, grind and polish them," Bassen says.

"The largest giant clam shell on record was discovered off the Japanese island of Okinawa in 1956, with a weight recorded at 270kg. My biggest clamshell weighs about 100kg more."


Wow! Apparently there are more diamonds in the world than giant clam shells. And there's more where that came from; she'll be displaying huge pearls at the Dubai World Trade Centre show, taking place September 18-20.

"Today's giant clam species produce the largest pearls in the world (baroque blister pearls) most notably the Pearl of Allah, with an estimated value of US $50 million," Bassen continued.

"So far I have collected five, and the biggest one is the size of a mango! This one I will display at The Hotel Show. Not for sale, although if I got an offer I couldn't resist I might consider selling it. There are hundreds of Tridacna Gigas pearls found but only five from the extinct species Tridacna Gigantea, making them the rarest pearls in the world."

However, what many people overlook in their quest for personal happiness is what could actually bring them the most peace of mind: being generous to others. According to a new study published in the journal Nature, scientists found that there is a reason being selfless can increase a person's happiness.

Despite noting that generous behavior is "costly" because it involves a person investing his or her resources for somewhere else, researchers found that there is a mechanical link between being selfless and fulfilled. For the four-week study, participants were divided into two groups and given money weekly. One set of people was asked to spend funds on others and the second group promised to spend the money on themselves. Scientists then looked at brain scans and found that those who participated in selfless deeds activated the part of their brains that is linked to joy.

Researchers also found that just making a promise to yourself that you're going to be generous to others can have a lasting impact on your level of happiness. "We find that a public pledge to be generous efficiently boosted generous behavior and happiness," the study said. "The behavioral and neural changes induced by this method are striking, considering that participants had neither received nor spent any money at the time."

Participants were also asked to report their level of happiness at the beginning and end of the experiment. Those who performed generous acts all viewed themselves as happier, no matter how small the action was. "You don't need to become a self-sacrificing martyr to feel happier," Phillipe Tobler, one of the study's researchers, told Medical News Today. "Just being a little more generous will suffice."

"I find accurately miniaturizing an item super satisfying," she told HuffPost. "When it's difficult to differentiate [the mini] from the original photo is when I feel best. The Deepest Swimming Pool in the World Looks Frighteningly Cool

On top of Belgian waffles, beautiful architecture, and festive Christmas markets, Belgium gives us yet another reason to visit. The deepest swimming pool in the world is located in its capital of Brussels. Appropriately called Nemo 33, the "only attraction park dedicated to diving" consists of several structures 113 feet below. From the photos, it looks like an amazing underwater house that serves as a diving playground.

Visitors of all levels are able to swim at Nemo 33 (minimum age is 12 years old), but must be accompanied by an instructor unless you're a certified diver. General admission is about $38 (35€) or $27 (25€) for those with certification, which includes all equipment. The best part about the pool is that it's heated to around 86 degrees, so that you can swim comfortably during your two-hour swim.

On top of also featuring a Thai bar and restaurant where you can eat and watch the divers pass by, Nemo 33 recently launched an underwater dining experience that allows diners to enjoy a fancy meal 16 feet deep into the pool. The Pearl restaurant is only two meters wide and requires you to swim to it. Once you're inside the pod, scuba divers will serve you foie gras, lobster salad, and champagne in waterproof cases. You'll be able to dine completely dry, of course. Though the meals aren't cheap ($106), you're definitely in for a once-in-a-lifetime experience.
